I think it's linked to proximity either you or something in range of the reversing sensors. Eg; parked next to a car. Mine won't sound when theres nothing around but will when there is. This is normally my head in the boot area whilst my foot is under the rear. Ironically, this is the only the sensor works.....

So why does it bong when using the dash button to close the tailgate and there is absolutely nothing behind or around the vehicle?

I think mine starts to play up when the battery is getting low (another issue)

You can tell I've got time to kill but by my reckoning there's 24 different ways and combinations of opening and closing the hatch...... You'll have to bear with me.

Talk about weird coincidences. My 3 year old Mk8 Fiesta (same car under the skin) gave me 2 horn blasts today when locking. Any other time it's happened, a door had been ajar.
Everything seemed secured. I turned it on and it said bonnet was open. It wasn't. Had a look and the plug into the connector by the micro-switch seemed a bit loose.
Refitted it and all seems OK now.

I hate to think what state mine will be in in 3 years time.
Fortunately I won't know!
