So, we have dedicated buttons for steering wheel heater and stuff but how about for turning on the rear view camera? only by (R)-eversing?

I don't believe any car has this.
All rear view cameras are automatically activated by selecting reverse gear.
There is a safety aspect to this.

Sadly no.
I've got it in my other car and it's good when you're stopped in traffic to keep an eye out for cyclists etc. In all cars they turn off once you get to about 8-10mph. It's a pity you can't put it on when stationary but not reversing just for added observation of your surroundings.
